Ingredients
- 2 boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 can (14 oz) diced tomatoes (with juices)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- ½ tsp red pepper flakes (optional)
- Zest of 1 lemon
- ½ cup toasted breadcrumbs (optional)
- 2 tbsp fresh parsley, chopped
Instructions
1️⃣ Prepare the ingredients
Dice the onion and garlic. Cut chicken into bite-sized pieces and season with salt, pepper, and paprika.
2️⃣ Sauté the aromatics and chicken
Heat olive oil in an oven-safe skillet over medium heat. Cook onion and garlic for 2–3 minutes, then brown the chicken on all sides.
3️⃣ Build the base
Stir in orzo, coating in pan drippings. Add broth, diced tomatoes (with juices), oregano, thyme, and red pepper flakes (if using). Stir well.
4️⃣ Bake the dish
Preheat oven to 375°F (190°C). Cover and bake for 25–30 minutes until orzo is tender and chicken is fully cooked. Add broth if needed.
5️⃣ Add the finishing touches
Remove the skillet from the oven and uncover. Stir in lemon zest, and top with fresh parsley and toasted breadcrumbs (if using). Serve immediately and enjoy!
