Cottage cheese flatbread

Ingredients

  • 1 cup cottage cheese
  • 1 ½ cups all-purpose flour (plus extra for dusting)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Optional: ½ teaspoon garlic powder, a pinch of chili flakes, or 2 tablespoons grated Parmesan
  • Olive oil or melted butter (for brushing)
  • Chopped parsley (for garnish)

Instructions

1️⃣ Mix the dough
In a large bowl, combine cottage cheese, flour, baking powder, salt, and any optional seasonings. Mix until a shaggy dough forms, then knead on a floured surface for 3-5 minutes until smooth and elastic.
2️⃣ Shape the flatbreads
Divide the dough into 4 portions, roll each into a ball, and flatten into oval or round shapes about ¼ inch thick.
3️⃣ Cook the flatbreads
Heat a non-stick skillet over medium heat and lightly grease with olive oil. Cook each flatbread for 2-3 minutes per side until golden brown with slight puffing.
4️⃣ Add finishing touches
Brush warm flatbreads with olive oil or melted butter, and sprinkle with chopped parsley for added flavor.

Notes

Pro oh là là tip: for an even fluffier texture, let the shaped flatbreads rest for 5 minutes before cooking. This gives the baking powder more time to activate.
