Ingredients
- 2 pounds beef country-style ribs
- 1 medium cabbage, cut into wedges
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 1/2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
1️⃣ Prepare the ingredients
Season the ribs generously with salt, black pepper, and smoked paprika. Slice the cabbage, onions, and mince the garlic.
2️⃣ Sear the ribs (optional)
Heat a skillet over medium-high heat with oil and sear the ribs for 2–3 minutes per side for deeper flavor.
3️⃣ Layer the crockpot
Add onions and garlic to the bottom of the crockpot. Place cabbage wedges on top, followed by the ribs.
4️⃣ Mix the broth
In a bowl, whisk together beef broth, tomato paste, apple cider vinegar, and brown sugar. Pour over the ribs and vegetables. Add bay leaves and thyme.
5️⃣ Cook
Cover and cook on low for 7–8 hours or high for 4–5 hours, until the ribs are tender and the cabbage is infused with flavor.
6️⃣ Serve and enjoy
Discard bay leaves. Plate the ribs and cabbage, spoon the broth over the top, and garnish with fresh parsley.
