Ingredients
• 12 oz pasta (spaghetti, linguine, or your preferred type)
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1/4 cup capers, drained
• 1 lemon (zested and juiced)
• 1/2 cup pasta cooking water
• 1/4 cup freshly grated Parmesan cheese (optional)
• Salt and pepper to taste
• Fresh parsley for garnish (optional)
Instructions
1️⃣ Cook the pasta: Boil pasta in salted water until al dente. Reserve 1/2 cup of the cooking water, then drain.
2️⃣ Prepare the sauce: Heat olive oil in a skillet over medium heat. Sauté garlic for 1–2 minutes until fragrant, then add capers and cook for another minute. Stir in lemon zest, lemon juice, and the reserved pasta water. Simmer for 2–3 minutes to blend the flavors.
3️⃣ Combine pasta and sauce: Add the cooked pasta to the skillet, tossing to coat in the sauce. Add more pasta water if needed, and season with salt and pepper to taste.
4️⃣ Serve and enjoy: Top with grated Parmesan and chopped parsley, if desired. Enjoy your bright, zesty dish!
