Ingredients
Scale
- 1 cup white chocolate chips
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1/2 cup + 2 tablespoons quick oats
Instructions
- Melt the white chocolate chips in a microwave-safe bowl in 15–30 second bursts, stirring between each, until smooth and glossy.
- Whisk in the lemon juice until the mixture becomes silky and uniform in texture.
- Fold in the lemon zest and quick oats using a spatula, stirring until fully coated and thickened.
- Use a tablespoon or cookie scoop to portion out dough onto a parchment-lined tray. Use the back of a spoon or the bottom of a glass to gently flatten each cookie into a smooth round disc, about ¼ inch thick.
- If desired, sprinkle a little extra lemon zest over the tops of the cookies for a fresh, vibrant finish.
- Chill in the refrigerator for 30–60 minutes, or until firm. Store leftovers in an airtight container in the fridge or freezer.
Notes
Pro oh là là tip: Pulse your oats briefly in a blender if they’re too coarse. Finer oats give these cookies their signature smooth finish and hold together beautifully once chilled.
